Banana, white chocolate and cranberry muffins

I’m not sure what the difference is between muffins and cupcakes to be honest (size? shape? contents?). These little cakes could be either but who cares, when they taste this good? I found a bar of white cooking chocolate in the cupboard that I must have bought for another purpose so I used it here. I am not really a fan of white chocolate, but since I didn’t need the whole bar, I tried some. Perhaps because it is not as sweet as the usual white chocolate I have found I rather like it (there is none left now…………). This is based on a recipe by Nigella Lawson in How to be a Domestic Goddess.

Banana, white chocolate and cranberry muffins

120g unsalted butterBanana, white choc and cranberry 2

1 teaspoon vanilla extract

50g caster sugar

3 ripe bananas (mashed)

60ml natural yoghurt

2 large eggs

1 teaspoon bicarbonate of soda

1/2 teaspoon baking powder

300g plain flour

50g dried cranberries

50g white chocolate – chopped

  1. Preheat oven to 180/160 fan/gas 4
  2. Melt butter in a large saucepan then remove from the heat. Mix in sugar, vanilla extract and mashed bananas. Stir in yoghurt and eggs and mix well. Add the bicarb and baking powder. Finally, mix in the flour, chocolate and cranberries
  3. Spoon into 12 muffin cases and bake for ~20 minutes until golden brown and springy on top.
  4. Place on a wire rack to cool
