And just like that, here we are in 2021. Let’s hope it is an improvement on 2020! I never stick to my new year resolutions but still make them nevertheless. Hopefully I will stick to this one: bake more cakes and update this blog more often. I wonder how many people have baked a banana cake over the past 9 months? Here’s one with a small twist………
Banana and apple cake
85g unsalted butter, softened
50g light muscovado sugar

2 large eggs (beaten)
3 medium very ripe bananas, mashed
1 apple, peeled, cored and grated
250g self raising flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
- Preheat oven to 180/160 fan/gas 4. Grease and line a loaf tin
- Cream butter and sugar together and then beat in eggs – add a tablespoon of flour at the same time
- Stir in banana and apple.
- Sieve flour and spices into the mix and combine
- Spoon into loaf tin and bake for ~50 minutes until a skewer comes out clean
