Banana and apple cake – and Happy New Year

And just like that, here we are in 2021. Let’s hope it is an improvement on 2020! I never stick to my new year resolutions but still make them nevertheless. Hopefully I will stick to this one: bake more cakes and update this blog more often. I wonder how many people have baked a banana cake over the past 9 months? Here’s one with a small twist………

Banana and apple cake

85g unsalted butter, softened

50g light muscovado sugar

2 large eggs (beaten)

3 medium very ripe bananas, mashed

1 apple, peeled, cored and grated

250g self raising flour

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

  1. Preheat oven to 180/160 fan/gas 4. Grease and line a loaf tin
  2. Cream butter and sugar together and then beat in eggs – add a tablespoon of flour at the same time
  3. Stir in banana and apple.
  4. Sieve flour and spices into the mix and combine
  5. Spoon into loaf tin and bake for ~50 minutes until a skewer comes out clean
