Although it’s been raining non-stop for the last few days we have had some beautiful autumn sunshine over the last few weeks and the colours in the garden and on my usual run/walk are amazing.


Here’s a recipe for Blueberry and Banana cake
Blueberry and Banana cake
100g butter (softened)
50g caster sugar
2 large eggs
3 ripe bananas, mashed
225g SR flour
1 teaspoon baking powder
1 tablespoon milk
150g blueberries (I use frozen)
- Preheat oven to 180/160 fan/gas 4. Grease and line a 900g loaf tin.
- Put all ingredients except blueberries into a mixer and mix well
- Fold in the blueberries
- Spoon into baking tin and bake for 40-45 minutes, until a skewer comes out clean
- Leave to cool in the tin for 5 mins before turning out onto a rack to cool completely
