Orange loaf

The lovely summer weather continues and I think this calls for a summery cake. This light and fresh orange loaf fits the bill nicely and is perfect for a picnic. There is one small piece left in the cake tin. Mr McGregor is going to be busy for some time planting out his leeks and then watering the garden. I am wondering whether it would be wrong to finish it while he is out?

190g unsalted butter, softened

190g plain flour

Finely grated zest of a large orange

90g caster sugar

3 large eggs

60g ground almonds

1tsp baking powder

25g plain yoghurt

1tsp vanilla essence

  1. Preheat oven to 170 degrees
  2. Grease a loaf tin and line with baking parchment
  3. Cream together the butter, sugar and orange zest. Add the eggs one at a time, scraping down the sides of the bowl between each addition until well mixed
  4. In a separate bowl, mix the flour, ground almonds and baking powder. Add to the creamed mixture in batches, ensuring fully mixed each time. Mix in the yoghurt and vanilla essence
  5. Place the batter in loaf tin and level gently
  6. Bake in preheated oven for ~50 mins until the top is firm and a skewer comes out clean
  7. Allow to cool a little in the tin before turning out to cool fully
