The lovely summer weather continues and I think this calls for a summery cake. This light and fresh orange loaf fits the bill nicely and is perfect for a picnic. There is one small piece left in the cake tin. Mr McGregor is going to be busy for some time planting out his leeks and then watering the garden. I am wondering whether it would be wrong to finish it while he is out?

190g unsalted butter, softened
190g plain flour
Finely grated zest of a large orange
90g caster sugar
3 large eggs
60g ground almonds
1tsp baking powder
25g plain yoghurt
1tsp vanilla essence
- Preheat oven to 170 degrees
- Grease a loaf tin and line with baking parchment
- Cream together the butter, sugar and orange zest. Add the eggs one at a time, scraping down the sides of the bowl between each addition until well mixed
- In a separate bowl, mix the flour, ground almonds and baking powder. Add to the creamed mixture in batches, ensuring fully mixed each time. Mix in the yoghurt and vanilla essence
- Place the batter in loaf tin and level gently
- Bake in preheated oven for ~50 mins until the top is firm and a skewer comes out clean
- Allow to cool a little in the tin before turning out to cool fully
